Phfft... we can pull a better one out of our ass that Tech TV's. Well, you can anyway. Here's what they got, what're they missing?
Anime
Japanese for animation. Japan has a huge and thriving industry for animation of all types, including movies with complex plots and adult themes. While there are some drawing styles -- such as the famous big-eyes look -- that are seen as indicative of anime, there is such enormous variety in drawing styles that anime cannot be restricted to just one of its stylistic offshoots.
Bushi
Originally applied to soldiers in service to a shogun, it has evolved into a term that applies to all professional warriors. It's similar to the term samurai.
Bushido
The code of the warrior.
Chibi
Japanese word used to describe characters as small, little, or young.
Edo
Ancient name of the city that became Tokyo.
Gaijin
Foreigner, someone who is not of Japanese descent.
Hentai
While this word technically means transformation or metamorphosis, in anime it has come to mean a form of perversion. There are many shockingly adult anime movies. They are often referred to as hentai.
Kaiju
A large and threatening monster. Think Godzilla.
Kappa
Monster spirit that lives in rivers. They like to drink sake and eat cucumbers. Also, they are dangerous to humans.
Katana
Curved sword that is sort of a symbol for Japan.
Kawaii
Cute is an obsession in Japan. The characters in a child's anime series such as "Sailor Moon" could safely be referred to as kawaii.
Ki
Literally meaning air, this term also has a figurative meaning as life-force energy, what many Americans would be familiar with in the Chinese word chi.
Manga
Manga refers to comic books, not the animation you see on TV or in movies. Lots of manga, however, end up in anime form.
Mecha
Also referred to as mech, this means cool technology or mechanical items. You'll see this term most often used to refer to giant humanoid tanks that battle it out -- usually in the heart of a ruined city.
Otaku
This is pretty much the Japanese equivalent of "fan boy." It's got a slightly derogatory meaning as someone without much of a life who's obsessed with this or that anime series, but it's also been reclaimed as a badge of honor for those who love anime.
Ronin
Soldiers who are free of a master or leader. Think of them as freelance fighters.
Sempai
Refers to someone who is a master or senior within any type of organization.
Tezuka Osamu

Post subject: Shoujo & Shounen
From the start, I knew they were missing (bi)shoujo(-ai) and (bi)shounen(-ai). Basically they mean (beautiful) girl or (beautiful) boy. They also refer to genres, Sailor Moon is an example of a shoujo anime and Dragon Ball Z is an example of shounen anime. Shoujo-ai and shounen-ai may be similar to yuri and yaoi, but focus on the relationships more than, well, gay or lesbian pornography. In conclusion, shoujo and shounen are two words that should have been added to TechTV's Anime Glossary of Terms. _________________ Flatter me, and I may not believe you.

Con - Short for "convention"; Anime conventions continue to grow in popularity, having originally been offshoots of Science Fiction and Comic Book conventions in the 80's
Cosplay - short for "Costume Play"; refers to the practice of wearing a costume of an anime or other fictional character. A very popular event at conventions. Normally refers only to people who dress as anime or manga characters, though the term has begun to branch off into other realms of fandom (such as Star Trek cosplay or Furry cosplay, despite the fact that dressing as Spock or as anthropomorphic Chipmunks has been around much longer than the term "cosplay" itself)
Doujinshi - also called "doujin" for short, a non-professional or fan-made manga; like a manga version of "fanfics" (see below), these tend to take characters from anime or manga or even videogame sources and place them in situations not shown in their original works (usually of a more mature nature).
Dubs - An anime that has re-recorded English dialogue "dubbed" into it. Often preferred by newer fans and by American television networks.
Ecchi/Echi - Japanese pronunciation of "H", shortened slang for "hentai", though manga and anime titles referred to as "echi" tend to have a softer connotation than "hentai" (kinda like the difference between erotica and porn)
Eye-catch - the "bumper" added in the middle of anime that usually preceeded and followed commercial breaks on Japanese TV. Some newer OVAs also include eyecatches, not because they had commercial breaks but because the fans liked them.
Fan service - generally any sort of eye-catching parts of an anime that aren't integral to the plot, though most usually used to refer to panty-shots, cleavage-shots, shower scenes, etc. (although sometimes big explosions and battle scenes are also refered to as "fan service") Meant mostly to titlate or excite the viewer.
Fanfics - short for "fan fiction", a story written by a fan that uses characters and settings from anime, manga, or other popular entertainment (such as Sci-Fi or popular television programs, etc.)
Fansubs/Fansubbing - "fansubs" are subtitled copies of anime produced by fans. Most useful when a title has not become commercially available in the U.S.; technically illegal, but generally tolerated until a title has begun to be distributed outside of Japan. Originally supported through a network of VHS tape swapping, it has evolved into "Digisubs", or "digital fansubs", which are found on such computer file-swapping networks and programs as gnutella, KaZaA, Limewire, DirectConnect, etc.
Japanimation or Japanime - now defunct terms for "anime", and somtimes seen as insulting to current anime enthusiasts.
Kareshi - boyfriend
Kanojo - girlfriend
Lemon - a term used for fanfiction that has a more mature or erotic nature. Usually a milder connotation than "ecchi", though both are used and usually mean the same thing.
Mahou - Magic
Mahou Shoujo - "Magical Girl"; a genre of anime or manga that focuses on a young girl who has been granted magical powers or been chosen as a hero, etc.; usually appeals to younger (preteen) female audiences. "Sailor Moon" and "Card Captor Sakura" are examples.
Manwah - Korean manga
Nani - "what?"
OAV/OVA - meaning "Original Animated Video" or "Original Video Animation"; refers to Anime that was sold direct to video instead of being broadcast on television. While movies that go directly to video in the U.S. are considered lame, in Japan entire series can be produced with better budgets, animation, and less censorship (meaning more gore, nudity, whatever). The original "Tenchi Muyo!", "FLCL", "Read Or Die", and the original "Vampire Princess Miyu" are examples of OVA titles
Oni - demon or ogre
Seiyuu - Japanese for voice actor or actress
Subs - Anime titles that have their original Japanese dialogue, but have English subtitles added. Often prefered by long-term anime fans and other puritsts of anime.
Super-Deformed - art style where characters are given huge heads and tiny bodies, making them appear very cute or young in appearance (usually shortened as "SD"). Often used as a self-parody in anime or manga series. Also called "CB" ("Child Body") or "Chibi".
Urusai - lit. "You're Annoying" or "Be Quiet", often used as "Shut Up"

Here's some more stuff I was thinking about...
ACen - You'll be hearing more about this in the next few months, especially if Tyler is going to go this year. "ACen" is short for "Anime Central", a big Anime Convention held in the Chicago area every year. This year it's at the Hyatt Regency O'Hare in Rosemont, IL, over the weekend of May 16-18. -chan - a suffix (added to the end of a character's name) used in Japan when addressing children or girls up to highschool age.
-dono - an honorific suffix, used mostly in historical works or fantasy stories, used for someone you respect, such as a feudal lord or land owner.
ESPer - another word for a psychic, or one who uses ESP (Extra-Sensory Perception). A popular genre in the late 70's and early 80's.
Fuku - lit. "uniform", usually refers to the sailor-suit uniforms worn by Japanese schoolgirls.
Gaijin - a foreigner, or anyone not of Japanese descent. The term "henna gaijin", which means "strange foreigner", often refers to a non-Japanese person who lives in Japan and can speak the language very fluently.
Hime - "princess"
Kami - a god or mystical being; "Kami-sama" usually refers to God.
-kun - a diminutive honorific suffix used when addressing young men or boys
Loli-Con - short for "Lolita Complex", or a person who has a fixation on young girls; the opposite is "Shouta-Con", someone who is attracted to little boys. Most characters in anime that display this are usually considered comedically weird characters.
Onsen - a Japanese hot-spring; a very popular setting for many anime episodes.
Romanji - Japanese written phonetically using the Roman alphabet (what I'm doing right now)
-san - formal honorific suffix used when addressing a person you respect or a stranger; sort of like "Mr." or "Ms."
-sama - also an honorific suffix, but even more respectful than "-san". Usually translated as "Lord" or "Lady".
Seme - usually used in Yaoi situations, the dominant or "male" role in a gay relationship.
Sentai - Japanese for "team", a term used for the genre of shows that feature a team of heroes, such as the Power Rangers shows shown in the U.S. now.
Uke - the submissive or "female" role in a gay relationship
Yaoi - actually an acronym for "Yama nashi, Ochi nashi, imi nashi" which means "no climax, no point, no meaning". As a genre, it acutally refers to short stories that focus mostly on comedic or sexual themes involving pre-existing anime or manga characters. This genre is usually seen in "doujinshi", or amature manga. In the U.S., however, it has become a term for mostly stories that involve male/male relationships, often of a more sexually explicit nature. Used mostly in fanfics and doujinshi.
Yuri - In the U.S., this has become the term for the female/female version of "Yaoi" stories. It is uncertain where this term came from, though my personal theory is that it came from the popular (and very explicit) "Yuri and Friends" series, a King of Fighters doujinshi created by Sagaido, that featured mostly lesbian storylines.
