Well, I've been a Fullmetal Alchemist fan since before it even came to America... or maybe it was like... right after Adult swim was showing the 1st promo for it. (A friend of mine told me about it, and I downloaded the episodes off limewire) So, back than, next to no one knew what Fullmetal Alchemist was. Suddenly, people I know that even hate anime are in love with Fullmetal Alchemist. It's kind of upsetting to see so many people falling in love with FMA. I mean, I'm okay if the hardcore anime fans like it, but I really don't like to see my favorite anime becoming pop culture icons, and that's exactly what Fullmetal Alchemist is becoming. I think Hot Topic is partly to blame for promoting it. (I shall be Mrs. Edward Elric someday.)
Well, I put in my 2 cents.
Inuyasha is probably loosing the popularity it gained about 3 years ago. I actually started watching Inuyasha recently. (Perhaps around the beginning of this year.) A ton of people I know have been watching it for 3 years or longer, but back then I had other things to do. (I was still in my Sailor Moon obsession, and collecting everything Japanese Sailor Moon was a first priority... and since I completely that collection, I moved on) I downloaded all the episodes I missed. (I missed a lot of them in English, but I was amazed at the acuracy the fan-subtitled episodes had to the english episodes I had seen.) Still, Inuyasha is my 2nd favorite adult swim anime, and my 3rd favorite anime in General.
I wouldn't go as far to say that Samurai Champloo is the next Bebop. (Whoever made that up, certainly knew that the creator of Bebop created Champloo, but they're two completely opposite storylines, as one takes place in the future, and the other takes place in Feudal Japan.) Samurai Champloo is as funny as hell. It's my Comedy Anime, the 3rd anime on my adult swim list, and my 6th favorite anime in general.

We had a thread somewhere on the similarities between Bebop and Champloo. The shows feel an awful lot alike. And yes that would be Watanbe's doing.
As for non-hard core fans liking FMA. There is nothing wrong with it. Really its the same thing about those who fall into the Dragonball Z, Narutard, Inuyasha crowd. The more people who watch these kind of series. The more of these shows we will get to see over here.
Yes you could just get the fan subs. But there is a trickle down if american fans like a show. We want these shows on the air over here. And using Hot Topic isnt a good gauge of things. Because tomorrow all the anime stuff could be out of there and replaced by god knows what is big this week.
